Bright Green Pea Fritters

Serve as an appetizer, snack or side dish to any meal.

    Boil the peas for 2-3 minutes or cook in a microwave safe bowl.

    Blend half of the peas (1.5 cups) with the eggs, green onions, and garlic until combined.

    Add the blended mixture to a large bowl and fold in the remaining peas, feta cheese, parsley, oat flour, almond flour, baking powder, and salt. Stir until just combined being careful not to over mix.

    Add 1 tablespoon of olive oil to the skillet and heat over medium heat. Drop a tablespoon of the mixture onto the pan. Flatten slightly and cook for 2-3 min on each side, or until golden brown. Repeat this process with the rest of the mixture.


Notes

If serving a baby, you can blend all of the peas into the mixture as shown in the photo and omit the salt.
