Caramel Apple Yogurt Bark
A fall inspired healthy treat that doesn't sacrifice fitness goals

Soak the dates in 1/4 cup hot water for 10-15 minutes to soften. Reserve the water.

Blend the softened dates, reserved water, 1/4 tsp vanilla extract, and a pinch of salt until smooth.

In a small pan over medium heat, toast chopped walnuts for 2-3 minutes, stirring occasionally.

Add 1/2 tsp cinnamon and a pinch of salt, toasting for another minute until fragrant. Set aside.

Line a quarter baking sheet with parchment paper.

In a bowl, combine greek yogurt, protein powder, and pudding powder. Add the nut milk 1 tbsp at a time until you reach your desired consistency (should be smooth and creamy).

Spread the chocolate yogurt mixture evenly onto the parchment paper to about 1/4 inch thick.

Top with chopped apples, cinnamon toasted walnuts and 1 tbsp of date syrup.

Freeze for 3-4 hours or until fully frozen. Break the bark into 12 pieces and enjoy!

Store leftovers in an airtight container in the freezer.
