Chocolate Coconut Protein Balls

In a large bowl, combine the shredded unsweetened coconut, vanilla protein powder, and coconut flour.

Add the melted coconut oil, maple syrup, unsweetened almond milk, and vanilla extract to the dry ingredients. Mix well until everything is combined.

Using a spoon or your hands, scoop out small portions of the mixture and roll them into balls. Place the balls on a baking sheet lined with parchment paper.

Place the baking sheet in the refrigerator for about 30 minutes to allow the balls to set.

Melt the chocolate and 1 tsp of coconut oil in the microwave until smooth, stirring every 30 seconds. Spoon or drizzle the melted chocolate over the top of the balls.

Place the baking sheet back in the refrigerator for about 30 minutes, or until the chocolate is fully set. Store in an airtight container in the refrigerator.
