Ricotta Stuffed Mini Focaccias
Simple yet delicious, these mini stuffed focaccia are amazing for an appetizer

In a bowl, mix together the ricotta, flour, baking powder, and a pinch of salt until the ingredients are well combined. Knead the dough until it becomes soft and smooth.

Divide the dough into four equal-sized portions and roll each into a ball. Flatten each ball into a disk.

Spoon a small amount of sauce and cheese onto the center of the disks. Close the focaccia by bringing the edges in the middle and press them down to seal them, forming small stuffed focaccias.

Using a brush or your hand, oil the focaccias on both sides

Heat a non-stick pan over medium heat with a bit of olive oil. Place the stuffed focaccias in the pan and cook for about 3-4 minutes on each side, until golden brown and crispy cover d with a lid.
