a simple yet spicy affair, so if your not a fan just dont add as much chilli!

Boil eggs for 8 minutes, let cool and remove the shell. Add to a saucepan of hot oil and fry for 3 minutes until brown all over, then remove. Reserve a 1/4 of the oil and remove the rest.

Make the paste by combining the shallots, chilli, garlic, black pepper, salt and oil. Blend to a smooth paste. Now add the paste to the same pan of hot oil. Cook for 2 minutes on a medium high heat, then add the lime leaves and simmer for 5 minutes on low. Add the eggs and mix well. Taste and adjust salt levels to your preference, sever and enjoy :)
