Welcome to Cruising the Caribbean. This is part 9 and today we’re taking a trip to Barbados, to make Bajan Fish Cakes.

    Cut your potatoes in quarters then place in a pan of cold water, turn on the heat and bring to a boil. Once boiled, simmer for 20 minutes until fork tender, remove, mash and set aside.

    In a large pan of boiling water, add your saltfish and boil vigorously for 15 minutes, then drain and rinse. Repeat this step again, then the saltfish is ready. Now add all the ingredients together in a large bowl, mix very well. You are looking for a wettish batter.

    Now heat up some oil until hot, then add a spoonful of the batter at a time, don’t overcrowd the pan. Once golden brown and crispy, remove and drain using a wire rack, then pat of excess oil with tissue paper. Serve with some hot sauce and enjoy
