Cassava Egg Balls
Similar to the scotch egg and bolovo, it's a soft boiled egg wrapped in a delicious cassava mixture then deep fried until golden and crispy.

Boil your peeling and boiling your cassava for 15-20 minutes until soft and mashable. Mash into a smooth paste, then add the remaining ingredients and mix well. Let sit in the fridge for at least 20 minutes but even better overnight to let the flavours really develop.

Divide the mix into 6 equal balls. Then flatten each ball and place the peeled boiled egg in each one and wrap carefully to avoid breaking the boiled eggs.

Place the Egg ball in the egg wash, then flour, then panko breadcrumbs, then set aside and heat up the oil to 190c. Fry for 5 -8 minutes until golden and crispy, serve and enjoy :)
