Similar to the Spanish Tortilla but this contains chip style wedges and a much thinner omelette. It’s served with a delightful onion & tomato salsa.

    Slice and prepare your potato into chip formations. Soak in some cold water to rinse starch off then pat dry with a towel. Season with a dash of salt & pepper alongside some olive oil, then bake in the oven at 180C for around 20-30 minutes until cooked through

    To make the omelette, combine the rest of the ingredients and mix well. Place a non stick pan on a medium heat, with a dash of butter. Once melted, slowly pour in the egg mixture and evenly distribute. Once the chips are ready remove and then place on top of the omelette, once the bottom begins to set. Cook for a few minutes until the chips are absorbed into the omelette.

    To make the salsa, combine all the ingredients together and mix well. Season to taste with salt and enjoy :)
