Boil eggs to your desired done-ness. For soft boiled, I’d suggest 3 minutes 45 seconds. Then remove and place in an ice bath.

In a large bowl combine the rest of the ingredients and mix well, ensuring everything is well incorporated. Now divide the mix into 6 equal balls. Then flatten each ball and place the peeled boiled egg in each one and wrap carefully to avoid breaking the boiled eggs.

Now prepare your frying station. First place the Bolovo in the egg wash, then flour, then panko breadcrumbs, then set aside and heat up the oil to 190c. Then fry for 5 minutes or until golden brown. Serve with some sauce of your choice and enjoy!
