In a large pot, heat up the olive oil. Once hot, add the potato and cook for 10 minutes. Then add the onion and cook for a further 8 minutes until soft and golden. Strain and save the olive oil, this is great to re use for another batch!

In a large pan, break 6 large eggs and season with some salt. Now add the potato and onion, mix well and let rest for 10 minutes minimum.

Now heat up a skillet or non stick pan with some of the same oil from the earlier frying. Pour in the mixture and cook for 12 minutes on a medium low heat. Then once it’s slowly starting to set, wet a plate and cover on top. Flip and cook the other side for a further 5 minutes. Serve and enjoy :)
