Pulled BBQ Chicken Burgers

I was challenged by @adam.floatinghome to create a dish using only the Kenwood Go Collection and today, I’m showing you how to make one of my favourite burgers, a pulled bbq chicken burger with creamy slaw and fresh buns.

    Start by making your dough by mixing together the water, yeast and sugar then let sit for 20 minutes. In your bowl, mix together the flour and salt until combined. Now place in the Kenwood Go Stand mixer and set to low speed. Beat the 1 whole egg and the yolk, then pour into the bowl while slowly mixing. Once combined, slowly pour in the water, yeast and sugar mixture. Once all added, add the softened butter one or two pieces at a time until that is fully incorporated. Allow the stand mixer to knead for 10 minutes, then take the dough out of the bowl and add to a well oiled bowl. Let rise for 1 hour.

    In the meantime, make your coleslaw by adding the carrot and red cabbage to the MultiPro Go food processor. Once shredded, add to a large bowl and mix with the water, mayonnaise, lime, salt and sugar. Mix well and set aside in the fridge.

    Now use the QuickMix Go hand mixer to shred your chicken. Pour in the bbq sauce and mix well, then set aside. Once the dough has risen, split into 10 equal sized balls and let proof for a further 1 hour. To make the egg wash, combine 1 egg, the whole milk and mix well. Brush on each bun, then dress with sesame seeds and immediately add to a preheated oven at 200C. Bake for 10 minutes, until golden brown. Let rest for 25 minutes, then slice and assemble your burgers
