Taking a trip to Puerto Rico to make Habichuelas (Stewed beans)

Soak the beans overnight, then add them to a pot with enough water to cover, adobo seasoning and a dash of salt. Bring to a boil, cover and simmer for 1 hour until cooked.

In a large stew pot, heat up a small amount of oil, then add the smoked pancetta, cook until brown. Then add the sofrito and cook for 5 minutes. Add the passata, oregano, sazon packet, adobo seasoning, grated garlic, then mix well. Add a dash of water and taste for salt levels. Once you’re happy with the sauce, add the cooked beans and mix well.

Serve with white rice, avocado and some fried plantain or tostones
