Green Figs & Saltfish

Taking a trip to St Lucia to make Green figs & Saltfish.

    Bring a large pot of water to a boil. Chop the ends off the bananas and make a slit through the middle. Place the banana in the water alongside a dash of vegetable oil. Let boil for 15 minutes.

    Heat up a skillet with a dash of oil, then add the onion, tomato and scotch bonnet. Season immediately with salt and let cook for 3 minutes. Then add the garlic and green onion, mix well.

    In a large pan of boiling water, add your saltfish and boil vigorously for 15 minutes, then drain and rinse. Repeat this step again, then the saltfish is ready. Shred and add the saltfish to the pot, mix very well and cook for 5 minutes on a medium heat. To finish, add the chopped coriander and mix well.

    Remove the bananas from the water, allow to cool before peeling and cutting them in half. Serve altogether and enjoy.
