Ervilhas Com Ovos Escalfados
An extremely comforting egg dish ready to warm you up this winter.

Heat up a large skillet on a medium heat with a dash of olive oil. Add the sliced chourico and cook for a few minutes to release some of the fat. Then add the red onion and cook for a few minutes. Add the garlic and tomato paste and cook until a dark red/almost burnt (5 minutes or so).

Pour in the white wine to deglaze and let simmer for 5 minutes until reduced by half. Add the tomatoes and passata, cover and simmer low for a 10 minutes to develop the flavour. Add the frozen peas, mix well then add the 3 eggs on top. Cover and let poach for a few minutes. Sprinkle with some fresh parsley and enjoy :)
