Healthy Stuffed Peppers

Preheat the oven to 375°F. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.

In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for another minute.

Add the ground beef, dried oregano, dried basil, salt and black pepper. Cook until the meat is browned. Drain any excess fat if necessary.

Add the tomato paste and cook for 2-3 minutes to allow the flavors to meld.

Remove skillet from heat. Stir in the cooked rice and half of the shredded mozzarella cheese until well combined.

Place the bell peppers in a baking dish. Spoon the beef and rice mixture into each pepper, packing it down slightly. Pour the bone broth into the bottom of the baking dish to keep the peppers moist during baking.

Cover the dish with aluminum foil or an oven safe lid, and bake in the preheated oven for 30 minutes.

Remove the cover, sprinkle the remaining mozzarella cheese on top of the peppers, and bake for an additional 10 minutes, or until cheese is melted. Garnish with fresh parsley and enjoy!
