Greek Chicken Tzatziki Salad
This Greek Chicken Tzatziki Salad has quickly become a meal prep favorite in our house. It’s fresh, versatile, and tastes even better the next day as flavors have time to meld together!

In a large bowl, combine the shredded chicken, cucumbers, red peppers, tomatoes, red onion, parsley, and dill.

In another bowl, grate the cucumber and toss with 1/4 tsp salt. Then squeeze out as much water as possible in a clean towel and set aside.

Dry out the bowl from step 2 and mix the minced garlic, lemon juice, olive oil, dill, remaining 1/4 tsp of salt, and black pepper. Stir in the cucumber and yogurt until well combined.

Pour the dressing over the salad ingredients and toss until evenly coated. Gently fold in the feta cheese and walnuts.

For the best result, store in fridge for at least to 2 hours to allow the flavors to meld.
