    Toast the sourdough bread. Sprinkle the grated pecorino cheese directly onto the warm toast, allowing it to slightly melt.

    In a small bowl, mash the avocado and add seasonings. Spread on top of the toast.

    Add the spinach/arugula mix, followed by the diced tomato and feta cheese.
