    In a wok, on medium heat, add the mustard oil, once hot, add the onion and fry until golden. Next add the garlic, ginger , green chilli and cardamom pods, sauté until fragrant. Now add all the dry spices, tomato purée, and sauté until fragrant (1-2 minutes).

    Add the tomatoes, turn up the heat and stir fry until the oil separates from the sauce (7-8minutes). Next add the prawns a stir fry for a few minutes. Add 1/4 cup boiling water and simmer for 5 minutes.

    Remove from the heat, top with freshly chopped coriander and serve with naan/basmati rice! Enjoy
