Easy, juicy, CAJUN GARLIC BUTTER CHICKEN. Serve with mashed potatoes/rice and your favourite steamed vegetables. It’s ready in under 30 minutes.

    Score criss crosses into the chicken breast. Combine the ingredients for the chicken marinade and coat the chicken. Cover and refrigerate for at least an hour.

    In a pan on medium heat, add the oil and butter, once melted. Add the chicken breast and sear each side. Remove from the pan and place on a plate. In the same pan, add the shallots, chillies and garlic, sauté for 2 minutes. Then add the Cajun seasoning and tomato puree, sauté for another 2 minutes. Add the chicken stock mixture, stir and place the chicken breasts back into the pan. Add parsley. Pour some of the sauce over the chicken and then cover and cook on low for 20 minutes! (You can also add corn on the cob or other veg to the sauce and cook with the chicken)

    Serve with mashed potatoes/rice and your favourite vegetables. Enjoy!
