Jamaican Curry Chicken

In a large bowl, Add the chicken, and all of the listed ingredients for the marinade. Cover and refrigerate for at least an hour or for the best results, overnight!

To a heavy based pot/wok or Dutch pot, on medium/high heat, add 4 tbsp cooking oil. Once hot, add 1/2 tbsp Curry powder, let it sizzle in the oil and stir for a minute or 2. Now add the chicken and stir fry until it has some colour. Next add the carrots, potatoes and 1/2 a cup of water. Stir, cover and simmer for 25-30 minutes. If you like a thinner consistency add another 1/2 cup of water.

Remove from the heat. Mash some of the potatoes with a spoon and stir. Serve with rice and fried plantain. Enjoy!
