Cut the chicken into chunks and add to a bowl along with the dark soy sauce, light soy sauce, sugar & mirin. Stir until coated and leave to marinade for at least 15 minutes.

Add the sesame oil to a wok and heat.

Then add the spring onions and fry for around 2 minutes.

Pour in the chicken and fry until piping hot throughout, and until the sauce has reduced.

Serve alongside a pot of @veetee_official sticky rice and your choice of veg
