    Finely slice the chicken and add to a bowl. Add the bicarbonate of soda, cornflour, light soy sauce and a splash of dark soy sauce. Coat the chicken and set to one side for around 10-15 minutes.

    Heat the sesame oil in a wok over a high heat. Add the sliced chicken and cook for 5-8 minutes or until coloured.

    Slice the spring onions, then add these to the wok.

    Then add the noodles, Approx 2 tbsp of dark soy sauce (adding more if needed) and fry for a further 2-4 minutes or until the noodles start to char and the chicken is cooked.

    Add with the beansprouts. Fry for a further 3-4 minutes and then serve!
