Luteal Phase Pumpkin Pancakes with Vanilla Bean Whipped Cream
Day 1 of sharing seasonal hormone healthy recipes: luteal phase pumpkin pancakes (with protein) and vanilla bean whipped cream. All made without refined sugar, gluten, or dairy.

Blend oats until you create oat flour.

Mix all the ingredients together, gradually pouring in milk. Start with 1/2 c and add more as needed.

Add a bit of oil or butter to a pan over medium heat. Batter will make 2 big pancakes, or 3 smaller ones.

Refrigerate coconut cream overnight.

Transfer the coconut cream only to a mixer (avoid the water). Also add in the maple syrup and vanilla bean paste. Add a splash of the water from the can.

Use a whisk attachment and beat the whipped cream for about 3 minutes, adding a little more of the water from the can if needed. Keep refrigerated.
