Fresh Tomato Pasta Arrabbiata

Tomatoes are going out of season, so enjoy them at their prime while you still can!

    Mince garlic, and chop onion, basil, and tomatoes.

    Preheat a large pan over medium heat. Once hot, add olive oil, then the onions. Sweat the onions for 2 minutes.

    Add the garlic, and sauté for a minute. Mix in the tomato paste until combined and darkened, about another minute.

    Then add the chopped tomatoes and let simmer until soft, at least 5 minutes. Smash the tomatoes with your spatula.

    Turn the heat down to low and add the Calabrian chili paste, crushed tomatoes, and water. Use an immersion blender to blend up the sauce until you reach desired consistency.

    Add the chopped basil, oregano, salt and pepper to taste, and simmer while you make the pasta.

    Serve with more basil and Parmesan. Enjoy
