Drain and rinse chickpeas. Chop celery and leek. Peel and chop carrots and sweet potato.

Preheat a large pot and once hot add olive oil. Then add the chopped leek, celery, and carrot and sauté for 2 minutes.

Add the sweet potato, chickpeas, broth, and water and bring to a boil on high heat.

Decrease heat to medium low. Add the seasoning, turmeric, coconut, and salt and pepper to taste. Let simmer for 10 minutes.

Add the kale once done simmering. Serve with olive oil and a little chopped parsley if desired.
