Slow Cooker Beef Madras

Place the onion, garlic, ginger paste, green chillies and coriander in a blender. Secure with lid and blend into a thick paste. Set aside.

Season the lean diced beef with the spice mix and mix well.

Bring a pan to the hob and place on a high heat. Once hot, spray with low calorie cooking oil and seal the beef on all sides for around 1-2 minutes.

Transfer the beef directly from the pan to the slow cooker.

Stir in the homemade paste, chopped tomatoes and beef stock. Mix well and cover with lid. Cook on the LOW setting for 3 hours.

Once the time is up, remove the slow cooker lid and mix well. Leave to cook uncovered on the HIGH setting for a further hour until the sauce has reduced down and thickened.

Stir in fresh coriander and serve over a bed of rice with mini naan bread.
