Cheese, Broccoli & Ham Pasta

Bring a pan to the hob and place on a medium heat. Once hot, spray with low calorie cooking oil.

Add the sliced red onion and garlic then fry for 3-4 minutes until the onions are soft.

Next, toss in the trimmed broccoli florets and stir fry for a further 4 minutes.

Pour in the stock, stir in the soft cheese and season with basil, wholegrain mustard and cracked black pepper.

Toss the sliced ham into the sauce and simmer on a low heat for around ten minutes.

Whilst the sauce is thickening, cook the penne pasta in a pan of salted water. Cook as per the instructions on the packet to al dente doneness.

Pour the single cream into the sauce pan, add the penne pasta with a ladle of pasta water and mix well to combine.

Finally, stir in the grated Parmesan cheese and garnish with fresh parsley. Enjoy!
