Slow Cooker Beef Goulash

Preheat the slow cooker to the HIGH setting.

Coat the beef in the cornflour and season well with salt and pepper.

Bring a pan to the hob and place on a high heat. Once hot, spray with low calorie cooking oil and sear the beef. Once browned, remove from the heat and set aside.

Add the chopped onion, garlic and peppers to the slow cooker pan.

Pour in the chopped tomatoes and beef stock, then add a squeeze of tomato puree. Season with smoked paprika, white pepper and salt.

Cover with slow cooker lid and cook for 4 hours.

Once the time is up, remove the slow cooker lid and leave uncovered on the high setting for a further 20 minutes to allow the sauce to thicken.

Garnish with soured cream and chopped parsley. Enjoy!
