Chicken Tikka Masala Rice Bake
One pan dish with minimal prep time and less washing up.

Preheat the oven to 200 degrees.

Remove any visible fat from the boneless chicken thigh fillets and place in a mixing bowl.

Stir in the fat free yoghurt and tikka powder. Mix well to combine.

Next, add the red onion, garlic and tinned tomatoes to a large oven proof dish.

Stir in the chicken stock, tikka paste and single light cream.

Pour in the rice and mix well to ensure that the rice is fully submerged in the liquid.

Place the marinated chicken thighs on top of the rice and cover the oven proof dish with tinfoil.

Transfer to the oven and bake for 45-50 minutes.

Prepare the mint yoghurt drizzle by combining fat free yoghurt & mint sauce.

Garnish with a couple of tablespoons of the sauce and fresh coriander. Enjoy!
