Really quickly threw this together yesterday after an afternoon at the theatre watching War Horse

    Dice the paneer up and put it in a lunchbox with a loaded teaspoon of the Greek yoghurt, the tikka powder, dried corriander and the turmeric, popped the lid on and gave it a good shake.

    With the rest of the yoghurt I added mint sauce and garlic paste & gave it a good mix.

    Fried the paneer off in the butter ghee until crispy on the outside.

    Loaded the toasted naan with the mint yoghurt, rocket, the fried paneer, cucumber, tomatoes, fresh corriander and a squeeze of lemon juice
