Fry off the thinly sliced shallots with your garlic with a pinch of sugar and a sprinkle of salt in a tablespoon of olive oil.

Cook on medium heat for 15-20 minutes until the onions turn golden brown and are caramelised.

About half way through get your spaghetti on to boil.

Add a splash of balsamic vinegar, some black pepper and a sprinkle of chilli flakes if you are using them.

Cook for a few minutes then add a splash of white wine to deglaze the pan.

Drain the spaghetti when it's al dente and keep back some of the pasta water.

Add your pasta to the onion pan with the grana padano (save some back for serving if you like) and some pasta water & give it a good mix so it's all combined.

Meanwhile cook your bacon and chorizo in a separate pan until crispy.

Add the meat in with the pasta and onions and stir well then serve with the remaining grana padano and some black pepper.
