Mini Spinach & Feta Chicken Burgers

These patties are loaded with greens + garlic and make a great addition to weekly meal prep. Serve with grilled veggies + creamy cauliflower mash (recipe below) for a simple + satisfying meal that hits all the right flavor notes.

    Combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape chicken mixture into 12 mini burgers; set aside.

    In a large pan or skillet, heat 1 tsp. avocado oil on medium high heat for about 1 minute; add mini burgers and cook on each side until no longer pink in the center.


Notes

Note: Sometimes add an egg for extra moisture but it’s totally optional!
