Cheesy Chicken Taco Soup

    Add the oil and onion to a soup pot and sauté over medium-high heat for 5 minutes. Once onion is soft and translucent, stir in the remaining ingredients, except for the cream cheese, chicken, and salt & pepper.

    Increase the heat to high and bring the soup to a boil, then reduce heat and simmer for 5 minutes.

    Add cream cheese to the soup, stirring until melted. Stir in chicken and cook another 5-7 minutes, until creamy and warmed through. Season with salt and pepper.

    Serve topped with avocado, cilantro, shredded cheese, sour cream, and/or tortilla strips!
