Chicken Parmesan Meatballs
Leaning heavily on this cozy SOS meal as we head into comfort food season and love that it’s high in protein, low in time commitment, and a 10/10 crowd pleaser.

Preheat oven to 400º. Combine ground chicken, parsley, half the garlic, parmesan, breadcrumbs, and egg in a large bowl. Season with mix until fully combined, then form into meatballs.

In a large oven-proof skillet, heat 1 tbsp. olive or avocado oil over medium heat. Add meatballs and brown each side, for about 5 minutes. Remove from pan.

Add another tablespoon of oil to the skillet. Add remaining garlic and cook about 1 minute. Stir in crushed tomatoes and red pepper flakes.

Simmer then return meatballs to the skillet and top with mozzarella. Bake until cheese is melted, about 5-10 minutes.
