Cheesy Chicken, Spinach, and Mushroom Bake

Lower carb, higher protein spin off of my favorite white lasagna recipe.

    Preheat oven to 400°F.

    Pound chicken cutlets so they’re of even thickness.

  3. 3

    In large bowl mix 1 T oil with seasonings. Add chicken and toss to coat.

    Heat remaining 1 T oil in large skillet and add spinach and mushrooms. Stir until spinach is wilted, about 3 min.

    In another bowl add cream cheese, spinach-mushroom mix, 1/2 cup mozzarella, and Parmesan. Mix well until smooth.

    Sear marinated chicken in skillet for about 2 min on each side, then arrange in 9 x 9 lightly greased baking dish.

    Spread cream cheese mixture evenly over chicken. Top with remaining mozzarella.

    Bake for 20-30 min, until chicken is cooked and cheese is lightly browned.


Notes

Feel free to swap out cheese and add in extra veggies for even more nutrients.
