Creamy Cottage Cheese Mac N’ Cheese

    Cook pasta shells to al dente. Drain but don’t rinse.

    In a blender, combine cottage cheese, milk, cheddar, garlic salt, and cornstarch. Blend until smooth.

    Add sauce to the same pot the pasta was cooked in and heat until a simmer is reached. Cook until thick and creamy, about 5 minutes.

    Add noodles to the sauce (or sauce to noodles), stir in additional cheddar if using and enjoy!


Notes

Tips: - You can make this entirely dairy-free by replacing the cottage cheese with plant-based Greek yogurt, milk, and cheese - Cook the pasta ahead for an even easier prep! (I store it in ziplock bags or tupperware) - Swap whichever cheeses you have on hand
