Flourless Pumpkin Chocolate Chip Blondies

Ultra gooey and packed with all the good stuff (e.g. cashew butter, warming spices, and mood-boosting chocolatee).

    Preheat oven to 350 F. Grease an 8x8 baking dish with coconut oil OR line with parchment paper.

    Combine all ingredients except chocolate chips in a bowl and mix well until combined.

    Fold in chocolate chips and transfer to the prepared pan.

    Dot the batter with extra chocolate chips (optional, but encouraged).

    Bake for 25-30 minutes, or until the center is firm.


Notes

No pumpkin? sub mashed sweet potato or butternut squash purée. Enjoy!
