Butter Chicken Biryani

Directions

    Boil rice with whole spices till 75% cooked.

    Marinate chicken with all the ingredients for 1-2 hours.

    Give coal dhua.

    Add 2 tbsp oil in a pan and cook chicken on high flame.

    Roast chicken on direct flame.

    Blanche tomatoes and cashew nuts, grind it to make paste.

    Heat butter & oil in a pan and add tomato and cashew nuts paste.

    Saute for 8-10 mins.

    Add ginger garlic paste, green chilli paste and saute for 2 mins.

    Add biryani masala, kashmiri red chilli powder, leftover marinade and curd and saute till oil separates.

    Add birista and cook for 2 mins.

    Add roasted chicken, fresh cream and kasuri methi, mix and switch off the flame.

    Spread 1/4 of the rice in a large vessel, put gravy mixture and layer it with remaining rice.

    Put some mint leaves, birista, ghee , kewra water and saffron water on top.

    Give dum for 15-20 mins.
