Roast Cauliflower, Tofu Saag

A beautiful green spinach curry and the roast cauliflower & crispy tofu!

    Pre heat your oven to 180c

    Add the cauliflower to a baking tray, toss in olive oil and season well.

    Roast for 25-30 minutes. Set aside.

    Place the spinach in a colander, pour over boiling water, drain and cool, then squeeze out most of the water and chop up.

    Add oil, onion, garlic and ginger to a mini chopper and blitz to a paste.

    Add the oil to a large frying pan, add the cumin seeds and allow to sputter, now add the paste and a pinch of salt.

    Cook for 8-9 minutes on a low heat.

    Now add the spices and cook for a further minute or so.

    Add the chopped tomatoes and cook for 10 minutes until softened.

    Pan fry the tofu in a separate pan. Heat the oil and fry the tofu for a few mins each side until crispy.

    Finally add the roast cauliflower & tofu & spinach to the curry - cook for a further minute then season with salt, pepper & garam masala.
