Sizzling Fajita Tray Bake

In a large pot, brown onion.

Add capsicum, fajita sauce, water and chicken stock powder and bring to a gentle simmer.

Chop chicken breasts in half and add to pot. Cover with a lid and simmer for 15 minutes or until chicken is cooked through.

Remove chicken and shred or pull apart with two forks. Return to pot and stir through.

Place 10 tortillas around the edge of a lined and sprayed tray.

Sprinkle with cheese, then add fajita chicken filling, then sprinkle with more cheese.

Add 2 final tortillas, fold over, and use toothpicks to secure.

Place in preheated oven (180 degrees) for 15-20 minutes. I like to place a second tray on top to ensure the wraps stay down!

Remove the top tray. Sprinkle with more cheese and grill until starting to brown.

Serve with leaves and avocado and enjoy!!
