    Thaw whiting as per instructions.

    Add a small amount of olive oil to a pan and add whiting. Sprinkle with salt and pepper.

    Cook until just white on one side. Flip, and repeat. Don’t worry if it’s not completely cooked through as you’ll add it back to the pan later. Remove fish from pan, place on paper towel on a plate and set aside. (If your fish has skin off, remove it now).

    In the same pan, add butter and garlic and simmer until butter is melted.

    Add tomatoes and cook until colour is changing. Add cream and stir, add salt and pepper to taste.

    Add fish back in. Cook for 5 minutes.

    Serve with rice and enjoy!


Notes

Remember when choosing your fish it’s important to look for the blue tick to ensure it’s responsibly sourced. I use Just Caught whiting. You can also use other types of fish in this recipe, just make sure you’re choosing responsibly.
