Mexican Pasta Meal Prep
Throw back to the meal prep I made while on placement - this was the perfect meal to freeze and eat after a big day and getting home late.

Heat a tbsp of olive oil in a large pot. Add onion and cook until translucent.

Add all remaining ingredients. Bring to a simmer for 15 minutes.

Meanwhile, cook pasta and zucchini noodles.

Serve pasta, topped with zucchini noodles and then Mexican sauce.
Notes
Delicious served either avocado, corn chips, other Mexican toppings or on its own!
