Enoki Mushroom Beef Rolls

A beautiful marriage of enoki mushroom and thinly sliced beef, paired with a savory umami sauce, making it the ideal weeknight comfort food served over fluffy, warm rice.

    Slice the roots off of the enoki mushrooms, place into a bowl of water. Add salt and leave it for 15 minutes.

    On a clean surface, stretch out one slice of beef. Top with 1-2 sections of enoki mushrooms. Roll the beef tightly around the enoki diagonally and repeat for the remaining ones.

    To make the sauce, combine soy sauce, dark soy sauce, mirin, cornstarch and water.

    Heat 1 tbsp oil in a pan over medium high heat. Add the rolls, rotating every few minutes until browned for about 3 minutes.

    Pour in the sauce, let it simmer and cook for an additional 2-3 minutes.

    Once cooked, remove from pan and transfer to a serving plate. Pour remaining sauce over the top and serve immediately.
