Wash and pat fry bone marrow, season with pepper and place them in a roasting pan.

Roast in the oven for about 15-20 minutes, until the marrow is soft and starting to bubble. Remove and let cool.

In a skillet or wok, heat 1 tbsp oil over medium-high heat. Add the sliced scallions and sauté until fragrant.

Pour in the beaten egg, scramble until just set, then add the cooked rice, breaking up any clumps.

Stir-fry for 3-5 minutes, add salt and soy sauce, ensuring everything is well combined.
