Vegan Kinder Bueno Bars
A healthier version of Kinder Bueno bars, vegan, gluten-free, and refined sugar-free.

Mix together the hazelnut butter, coconut cream and maple syrup until well combined and smooth. Spoon this into ice cube moulds so that they are 3/4 full.

Crumble the rice cakes and sprinkle this on top of the filling mixture, then freeze the bites for 4 hours or until set.

Place the chocolate in a bowl over a sauce pan with 2 inches of water in on a low heat, stirring gently, until the chocolate is completely melted.

Dunk each chilled bite into the melted chocolate, coating it evenly on all sides. Allow any excess chocolate to drip off, then place the coated bites back on a parchment-lined surface.

Once all the bites are coated, refrigerate for 10 minutes to allow the chocolate to set completely. Serve chilled and enjoy!
