Sticky Biscoff Cake With A Healthy Biscoff Caramel

A lighter take on a sticky toffee pudding, packed with fibre and some protein from the whole meal flour and yoghurt but it’s also packed with biscoff

Ingredients

    Mix your butter, yoghurt, dates, milk and vanilla extract in a bowl

    Fold in your crushed biscoff biscuits, flour and bicarbonate and mix

  3. 3

    Coat your slow cooker in fry light and pour in the mixture

  4. 4

    Top with 2 biscoff biscuits and leave on high for 1 hour and a half, check the centre and leave on high until the centre is cooked through, should be soft and springy. I left it for 2 hours

    To make the healthy caramel, add your light coconut milk and biscoff spread to a saucepan and cook on low until the biscoff spread has melted, turn the heat up and cook until it starts to thicken

    Pour over your cake and top with crushed biscoff biscuits
