Sticky Espresso Toffee Pudding
comforting and warm<3 so so delicious. I love this espresso sticky pudding! It is made with actual coffee and soaked dates. Its super moist and drenched in this unbelievable toffee sauce! Top it off with tiramisu ice cream and OMG its truly the best!

Simmer dates and coffee in a saucepan on low-medium heat for 6 minutes until the dates become soft.

Cool for 10 minutes and blend the mixture until smooth.

Preheat oven to 350°F.

Mix softened butter and sugar in a bowl.

Add eggs, vanilla, and date mixture to the bowl and mix.

Sift in flour, salt, cinnamon, baking soda, and baking powder.

Fold until no flour is visible.

Bake in a small 8 oz ramekin for 20-25 minutes.

Make the toffee sauce by simmering sugar and water, then adding butter and vanilla.

Slowly add heavy cream and simmer for 1-2 minutes.

Remove from heat and cool.
