Red Pepper Pesto Pasta with Jalapeño and Red Pepper Chicken Sausage

    cook pasta according to package, reserving some pasta water for later

    In a large skillet over medium heat, add oil. Cook sausage slices until golden brown on ear side (the ones I used from Trader Joe’s are fully cooked but I like them crispy). Set aside on a paper towel

    in the same pan, turn the heat to medium low, add butter and tomatoes and cook til begins to soften

  4. 4

    turn heat to low, add coconut milk and bring to a low bubble, stirring til thickens slightly.

    add pesto, followed by pasta and a dash of pasta water and stir until pasta is evenly coated

    add parm if desired, add sausage

  7. 7

    top with red pepper flakes and more parm to serve
