Creamy Lemon Orzo

    cook orzo according to package

    while orzo is cooking add lemon juice, zest, nutritional yeast, parm, beans, almond milk, salt and pepper to a blender or food processor and blend until smooth and creamy, set aside

    when orzo is done, remove from heat, add frozen peas (will help stop cooking), let stand for ~1 min

    strain orzo and peas, reserving some water

  5. 5

    in same pot over low heat add vegan butter let melt, add sauce mixture and stir til warm and slightly thickened

    add orzo/ peas, stir til combined

  7. 7

    add pasta water

    add arugula

    plate and top with red pepper flakes, extra parm, black pepper and lemon zest, as desired(all optional)
