Coat butternut squash with olive oil, salt, pepper, ginger, thyme, nutmeg (a dash or so of each) and cook in a 400° oven for 20 mins, flipping halfway through.

Brown ~1 tbsp of butter by heating in a pan over medium heat and stirring frequently until golden, then add sage and fry until shriveled and crispy.
